The establishment of the village is not precise. Various relics of settlements, archaeological discoveries and epigraphs that have been found, declare that the area where Pyrgi is located today, was inhabited from the prehistoric years. 

According to the testimony of priest Grigórios of Chios (who lived as a monk in Nea Moni), Pyrgi existed since 1089.  Konstantinos Sgoyros certifies its existence in 1362, when conquerors of the island were Genouates (1346-1566). The Buondelmondi marks it as a castle in his map in 1422. 

The historian George Zolotas seems convinced that the initial form of village existed, before the possession of Chios by Genouates. At the same time many other small and big villages were scattered in the area where Pyrgi is located today. The residents of all these Byzantine settlements, which had no fortification, joined themselves with the residents of Pyrgi, in order to create a safe, rich and well fortified village.

George Theotokas in his extensive article "Pyrgi of Chios", that was published in the "Modern Greek Letters" in September 1939, says that Pyrgi was created by soldiers of Byzantium of foreign origin, to whom the state gave away the earth of that area. There is no reference neither about the chronology of this fact nor about the nationality of soldiers. The writer reports all these, keeping in mind that probably Pyrgi was constituted by the union of many villages, which were in whereabouts. He supposes that in these villages lived persons of different origin, and Pyrgi enclosed them, in one multinational population.

According to the local tradition, during the Byzantine Empire in the end of 14th century, the residents of close villages abandoned their settlements for reasons of safety. They were assembled in the current district Pyrgousiko or Agia Paraskevi and established the village. The trqdition is confirmed by the existence of names that the old villages and their churches brought. (e.g Kerousis, Ag. Georgios, Sozontianos)

George Theotokas due to his origin used to visit Pyrgi from young age. From his point of view residents of Pyrgi can be distinguished in three racial types. First of all, the Modern Greek type, which is the amalgam of various racial characteristics. Those constitute the newer Hellenism. Characteristics of this type are the mediocre height, mediocre physical strength and dark or brown hair. The second type is clearly from north. Tall with blond hair and colorful eyes, reminds northern populations of Europe. Finally the third type is clearly Eastern rather short, very dark skin, with characteristics that remind the populations of Asiatic Close East.

In 1346, the possession of the island devolved to the authority of Genouates, one of the 2 biggest commercial forces of this era. They organized the settlements in well-fortified villages, one of which was Pyrgi.

The settlement of residents of close villages in Pyrgi is dated in the end of 14th and in the beginning of 15th century, when the possession of Chios by Genouates, already had been made official by the Byzantine state. From 1363 the emperor of Constantinople Ioannis E' Palaiologos recognizes the rights of Joystjniani in the island. 

Genouates established the institution of “Mnimonon” or “Notaron”, which were responsible for regulating private or public matters (heritages, donations, contracts etc). Their actions were written in special books, the codes. In the library of Korais, 350 codes are saved from which the 58 come from  Pyrgi.

Pyrgi, and the villages near it, came out intact from the big devastating earthquake, that literally convulsed the entire island on 22 March 1881, and thus, beside the alteration that these settlements have suffered from the corruptive effect of time and the adulteration of architectural physiognomy of their houses from the human intervention, still constitute a historical monument, an authentic proof of an old era, a heirloom of medieval past.
