During the period that Chios was under the possession of Genouates (1346-1566), the mastic production was more organised. A business was established, “Maona”, which undertook exclusively the mastic trade and management. In convention that was signed on 26 February 1347 between the municipality of Genova and “Maona” were set special officials (persons for ingathering of product), examiners (with competence they investigate the boats for contraband) and supervisors of mastic. The commissioner could nominate employees. The employees were responsible for the production recording.
